herby greek yogurt sauce
this is a great thing to eat when you are feeling like you need some self-care but don’t want to feel overly indulgent. because yogurt is still healthy* you know. it’s creamy, it’s salty, it’s tangy, it’s herby. it’s everything you want on anything, all the time. it is basically a chimicurri tzatziki mashup.
i eat this way too fast so i don’t have a picture but luckily we live in an age of technology.

the gist
in a food processor, combine:
a couple handfuls of fresh herbs — dill, mint, parsley
a shallot
a healthy pour of olive oil
the juice of one lemon
healthy pinches of salt (more than you think), msg, and black pepper
blend until combined
mix into 2-3 cups of greek yogurt
add more olive oil and/or salt to taste
some variations
add dried sumac
sub kelp vinegar for lemon
simmer your olive oil with some red pepper flakes for a kick
what to eat this with
as a dip with hummus and your dipping carb of choice
charred or oven-roasted zucchini, eggplant, or other hearty veg
grilled meats — recently ate it with some pan-seared lamb chops
on toast with smoked salmon and sliced radishes
whipped into your scrambled eggs
thinned out with more olive oil and lemon juice as as a salad dressing
piped onto nachos in lieu of sour cream
